Wine History: |
The 2005 growing season was a mild and prolonged season that allowed for a long hang time on the vines, which produced a better balance between sugars and tannins. We used a secret combination of three yeasts to ferment the Cabernet Sauvignon during an extended maceration to pull out the optimum blend of tannins and varietal character to enhance the wine. We then put the wine to sleep for 22 months before bottling; this wine was not filtered or finned. ENJOY! |
